The most helpful thing I ever read on fingering while sight-reading was Manu Fonsny's post How to Work Out Piano Fingering When Sight-Reading
Also, I use Hanon for fingering of scales, arpeggios and double thirds, except for when I can't reach. In that case I decide on an alternative fingering and stick with whatever works for me.
